“Make well in center.”
May 21, 2009emily No Comments »When I first started baking, the very first recipe I attempted told me to pull together flour, sugar, a couple eggs, and something else. Then it told me to “make well in center.” I was completely baffled by this instruction. “Make well in center?” What does that even mean? I assumed (cough) that it meant that I should mix the ingredients together well and then proceed. Why they needed to be mixed well in the center was beyond me, but I do what I’m told. Or not. Years later, I now know that “make well in center” means to make a damned well in the center of the dry ingredients, fill the well with the wet ingredients, and mix to incorporate. Remind me to tell you someday what I used to think those “do not pass” highway signs meant when I was a kid.
